Anyone having problems building Retroarch using the RetroPie installer on PC?

Trying to reinstall retropie after a fresh install, Pop!_os 20.04. Nothing much different from the old install, I just decided to clean it up after installing loads of crap I don't need trying to get something else to work.
Retroarch fails at building
make: *** [Makefile:206: obj-unix/release/cores/libretro-ffmpeg/ffmpeg_core.o] Error 1
First I thought it was because I have a custom build of ffmpeg. But it wasn't it.
If I add the --disable-ffmpeg flag into the params, it builds okay.Anyone else having issues or is there something on my system playing silly buggers? Any issue just building with the --disable-ffmpeg flag, will it affect gaming?

No,
ffmpeg
is used only for recording, so you won't be able to record a video or stream. -

Looking at the log, it looks like you're either missing some of the
ffmpeg
libraries headers or the version you have is not compatible with RetroArch. Re-installingffmpeg
and its libraries may fix the compilation. -

I thought that so I went back to the vanilla one (Just removed and reinstalled again just to make sure) exact same again.Something must just not be playing nice :'(

Did you re-install also the additional
ffmpeg
packages likelibswresample-dev
,libacodec-dev
,libavformat-dev
,libswscale-dev

Just reinstalled them, same thing.Ah well, it doesn't seem to be RP or upstream in retroarch, seems to be entirely at my end. .
The only thing I can think of is I installed some Ubuntu-studio stuff to get jack/Guitarix working, though I had it before too. I'm guessing whatever is different and is allowing them to work (sort of) this time is some how breaking something else.
