      Hello,

I went in and uninstalled Reicast from the packages then cleared the Dreamcast ROM and BIOS files. However, Dreamcast category still shows up with a System Manager entry on my RetroPie menu. Not sure what else to do for scrubbing my system of it.

I think you may have to delete reference to it in your /etc/emulationstation/es_systems.cfg

I ssh'd into it (or directly on the device once you F4 out of ES), went into home/pi/roms/dreamcast and deleted the file in there (systemmanager or something like that). They don't show up in the SMB share, only on the console. After a restart of ES dreamcast didn't' show up anymore.

With RetroPie 4 there is no need to manually remove stuff - you can remove it from RetroPie-Setup and it will remove the entry from Emulation Station - although you will need to remove any roms folder yourself. If you have a System Manager entry the roms folder is not removed.
