Are you sure that your ps1 adapter fully supports dance mats? If the pad is just mimicking the directional input of a normal controller, it could be that the adapter is reinterpreting the directions to an axis. If so, I don't believe that up and down can send input at the same time. The same would go for left and right.

If it is that your adapter is reinterpreting the directional input to axis input that a computer would understand, you'll either be faced with finding a new adapter that sends directional input as individual button presses, or seek out a software solution that will take the axis information from the adapter and map it to a virtual controller as individual button presses. Even then, you'll need to make sure that the emulator supports up/down and left/right combinations.

I believe you might be able to use that information to get it working, but it'll take a good bit of research, as well as some trial and error and maybe even some remapping software (A popular trend today). A good place to start is by running jstest to see exactly what happens when each button is pressed in comparison to what happens when combinations of buttons are pressed.

I took a quick look and it seems that, while possible, 'Stepmania' on RetroPie would require a lot of work for a somewhat flawed result. You would need to compile it for the Pi, run it in the desktop environment to get experimental OpenGl support and then create a launch script to execute from Emulation Station. After that, integrating and mapping a dance mat would also be required. When it's all said and done, it looks like those who got it working previously saw poor performance. You can read up on it more yourself by just searching for "Stepmania Raspberry" in Google.
