Would this be compatible with RetroPie (seeing as RP's not a full version of Raspbian)?

If so, pretty cool stuff! You could have one button to shutdown, one to turn on!

RetroPie is Raspbian Lite - it's still a full version in the sense the desktop etc can be installed later. It's not cut down in any way that would make it incompatible.
That should work fine. You can't use that to power on btw - at least not without additional hardware - just shutdown or reboot.
