Is there a way to remove all signs of scraping?

I've used both the inbuilt scrapper and Steven Selph's Scraper but am getting inconsistent results across the emulators that it is obtaining metadata for. I initially was manually loading the correct images (it would scrape some covers from different regions). That's fine for smaller romsets but would take forever on the larger ones so I've decided to go without images or description on those.
I've removed the images from the following:
/opt/retropie/configs/all/emulationstation/downloaded_imagesAlso replaced the xml file found in the following directory with the XML of one of the systems that was not scrapped:
/opt/retropie/configs/all/emulationstation/gamelistsI initially just removed the text in the file so it would only show:
<?xml version="1.0"?>
<gameList />However did this not work either. The issue seems to be that the file reverts back to the original one once retropie reboots. The games list on retropie is also not centered unlike the emulators that have not been scrapped so I know this method hasn't worked. I've searched the forum and google and could not see a solution. I'm assuming it's not as simple as removing the XML gamelist file and images? Also, is it safe to assume any games I cannot see in retropie have been possibly labeled incorrectly - I can see roms are there when I ftp to the directory.
Any help is appreciated.

@batman If you are trying to delete the XML while emulationstatinon is running, when you exit emulationstation the scraped data is still being saved again to the XML. To do this correctly you need to exit emulationstation then delete the gamelists (comand-line or samba)

@iconrumble Thank you. No problems at all once I accessed and then modified the file from samba. File didn't revert back upon a reboot and the game list in Retropie is centered again.
Will need read up on how to scrape screenshots for the arcade emulators when I have some more free time.
