Possible to enable hotkeys but still have one button as exit? Which files to save to backup configuration?

As per the thread title, I'm wondering if this at all possible. I'm using an Xbox 360 controller. I previously had the hotkeys setup as default (start/select for exit, select/right shoulder for save etc). Instead, I assigned single button press as the exit button (Xbox home button) as I wanted a consistent way to exit all my emulators. I found it particularly tricky to assign start/select for exit buttons on the N64 and Dreamcast emulators so this seemed like the only option.
The issue that I'm facing now is that I now is using the quick save or quick load as I've disabled the hotkey. I did manage to assign them as my shoulder buttons but noticed that these are consistently pressed by accident - by me or others. If there any way to enable the select button as the hotkey so I can still do quick saves/load but still have one button as the exit? I'm assuming the answer is no enabling the hotkey probably binds the exit as a two button configuration?
Also, does anybody know which files I can backup to save my current configuration (mainly in terms of controller settings). I'm not concerned about roms, metadata or themes. I know I can always backup my entire SD card but want to avoid this as then I have no means to move my setup to a smaller SD card or use a fresh install in the future. What would I need to backup so I can drag/drop the files in the folder of a new configuration, move roms and have it ready to play with my current controller?
Thanks in advance.

I assume you're talking about RetroArch settings here. I've tested and it is possible to map the same key to "Enable hotkeys" as well as "Quit RetroArch", thereby having a single button responsible for exiting the software, while also leaving hotkeys enabled. However, you would then have the problem of exiting out every time you pressed any other hotkey combination. I think you're going to run into problems with this no matter how you try to handle it.

@mediamogul Thanks, I didn't think it was possible but thought that there may have been a sneaky way to get around it. I have no desire at this point to re-configure all my keys again (think that's taken the longest alongside managing roms). May just completely disable the quick save/load and play some of these games the traditional way - no saves!
