Nestopia does not have retroachievements.
Are you sure? Nestopia is listed as being supported and although I'm not near my setup at the moment, I could swear they're active when I run it.

@mediamogul if so, not sure when. It always told me the core is not supported. I will update nestopia and test.

Is retroachievements even working? Can't find much online about it -
@fun4stuff yes, it is working. I asked for the logs because I'm used to get a lot of timeouts when there are many users playing. The retroachievements.org servers aren't that powerful. But it doesn't seem to be your problem though...
I'm on a trip and the internet here is really bad. I'll try to check what's hapenning when I have a chance.

Well i was able to get fceumm to work. It appears that the roms have to be unzipped in order to load. Still no achievements though. At least not with the roms tried. -
@fun4stuff fceumm had some issues that were recently fixed with zipped archives though I don't know how they affected the retroachievements for that core. they should be solved now though

Is there any advantage between lr-FCEUmm and lr-Nestopia as far as RetroAchievements are concerned, or do they both trigger about as reliably?

@mediamogul What I know about RetroAchievements and NES cores is exactly what I put in the RetroArch wiki:
QuickNES
The QuickNES seems to be the NES core with the best compatibility. No problems related to RetroAchievements were found in this core after the 05-Nov-2016 fixes.
NOTE: There's a known issue with QuickNES on Android (not related to RetroAchievements); in the impossibility of using QuickNES, it is recommended to use FCEUmm).
FCEUmm
There are a few known achievements that aren't working with FCEUmm (e.g.: pickup items in Metroid, Goomba Massacre in Super Mario Bros 3).
Nestopia
Untested.

Will anything show up in retroarch under RetroAchievements if I haven't unlocked any achievements previously? Wondering if it displays all possible achievements or only achievements that I have obtained. -

@fun4stuff on the website you should see all the games you played. The achievements you dont have will be grayed out. Does the website show anything?

Are you sure you're looking in the right place? You have to invoke RGUI and then go to Quick Menu -> Achievement list / Achievement list (Hardcore).

Yes, that's exactly where I am looking. So that should only show unlocked achievements? I was not sure what should be displayed there
