I'll try and help but I'll need some more info first.What resolution setting did you use in the layout.xml file?
What monitor/TV are you using?
What resolution is the TV/monitor?
And finally how are you connecting the raspberry pi to the TV/monitor? -

Looking at the screenshot I think you'll find that your monitor is actually 1280x1024 (not 1280x960). That is a 5:4 resolution and isn't currently supported I'm afraid.

@ruckage Thanks for at least letting me know. I thought this was 1280 x 960. Ah well, hit me up if and when you do add support for it.

A workaround would be to force the pi to output a 4:3 resolution that your monitor supports. Most monitors support several resolutions, I'd expect all monitors would support common resolutions such as 1024x768, if you're lucky it may even support 1280x960 but you'd need to look up the specs of your monitor first. -

I'm really impressed by the talent some people have. Unfortunately, I'm not as skilled as people here. I would like first to thanks Ruckage for his work. That's absolutely beautiful.
However, I have a pretty straight forward question about the nes mini themes: Is an option or a workaround to have parralax scrolling of the game, like the picture below?

I'm a little confused as to what's being asked here, what do you mean by 'parralax scrolling of the game'?
If you mean having a carousel for the gamelist (like the system view) then no, that's not possible with EmulationStation currently.
If you mean having the secondary scroll bar with the small icons showing all systems then again that's also not possible with ES.
If I've misunderstood and you mean something entirely different then let me know.

Any way we could have support for Kodi as a system on the main menu instead of inside ports? I followed this guide to get mine running but in your themes I get a black screen since it doesn't support Kodi.

Question.
I have downloaded Portable EmulationStation for Windows and the NES Mini Theme doesn't work. Is there some alterations I have to do for the source code to get it to show up for the windows version?
Any help would be great.
