having trouble reconfiguring games

Hi guys,
Im currently running retro pie 4.2. When I select a game and then press a to reconfigure settings, I go into the menu and reconfigure resolution etc. Then when I start up the same game and if I dont like what I changed I go back into the reconfigure menu and for some reason I cannot change anything the second time. Say for example if I try change the resolution for the second time it just resets back to the previous resolution.
Does this mean you can only use the setting once and that it?
On one game I set the resolution too high and the game will not start. I go to change the resolution and it stays as it was before. Not sure what to do.
