Problem with the RetroArch configuration file (RetroPie for Ubuntu)

Hello everyone :)
I have a problem with RetroArch when I save a configuration for example to change the function of the ESC key when I restart RetroArch the change is not taken into account why ?
Where is the file RetroArch.cfg in RetroPie ? Can we edit it ?

Probably because you're not saving the configuration after the modification. The global RetroArch configuration file is at
/opt/retropie/configs/all/retroarch.cfg
, and can be edited by starting RetroArch directly from the RetroPie menu. -

Same to play the joystick with the core Fuse (ZX Spectrum) it is obligatory to go in Controls > User 1 Device Type > Kempston Joystick then I go in Overrides > Save Core Overrides.
At the restart of RetroPie changes are not taken into account !

That's not part of the core overrides, so it's not saved there. Take a look at the Docs for the Fuse core to see how you can set this option in the configuration file.

OK but I do not know where to find this documentation ?
& to reassign the basic keys of RetroArch & save the configuration how do we do it ?

It's OK I found how to have the Kempston Joystick at the start of Fuse :) you have to add the following line
input_libretro_device_p1 = "513"
to file /opt/retropie/configs/all/zxspectrum/retroarch.cfg
