Mortal Kombat 1 has almost perfect balance between most of the characters and favors aggression over defense unlike most other fighting games. The same can't be said for MK2 and beyond, balance went completely out the window on MK2...

A bit less famous than the Street Fighter, MK, MvsC or KOF series, but I would recommend :
- Jojo
- Darkstalkers
- The last blade

Street Fighter Alpha 2 Zero
Killer Instinct (although you need a PC to run the arcade/MAME)
Mortal Kombat Trilogy -
Garou: Mark of the Wolves and anything Marvel on CPS2. Also, Waku Waku 7.
I run everything in MAME2003-Plus or MAME2010 on a Pi 3b+.

If I can find these and function in mame2010 is that better than mame2003? I mean I can’t find any fault with the ones that are running in 2k3 right now.

If I were going to create an arcade machine (which I am), I would (do) want the following fighting games:
All of the Capcom fighting games like Street Fighter Alpha 1-3, SF2, SF3, the Marvel vs. Capcom games, Darkstalkers 1-3, etc.
Mortal Kombat 1-3
The NeoGeo fighters like Fatal Fury, Samurai Showdown, King of Fighters, etc.
Tekken 1-3 (later ones would be nice, but probably not feasible on a Pi)
Killer Instinct 1 and 2 (completely impossible on a Pi)That's a great, solid base that gives a ton of variety. However, I'd also add:
Time Killers (terrible game, but lots of fun)
Eternal Champions (nobody's favorite, but I love it)
Guilty Gear (all of them that are possible)
All the great SEGA 3D fighters (Virtua Fighter, Last Bronx, Fighting Vipers, Fighters Megamix, etc.)
Primal Rage
Clayfighter 1 and 2
SoulBlade/Soul Caliber
Mace: The Dark Age -
Ah, I See You're a Man of Culture As Well. Nice thread. SNK+Capcom=WIN/WIN situation. Some games and systems require a pc and I am not sure how well they run, so I don't include them. Here is a short list of some of my favorite 1vs1 fighting games:

If you want some joke games, then put Rise of the Robots to the list. It is the worst videogame ever.

Street fighter III Second impact gets the most playtime here. Tekken 2 (ps1) is an all time favorite too.

Some non-mentioned fighting games i find rather enjoyable :
- Neogeo : Breakers Revenge, Matrimelee
- PS1 : Street Fighter EX 1 & 2 (i ignored those for 20 years, just because they were 3D, before trying them and noticing i was just narrow minded), Rival School, Slap Happy Rhythm Busters
- DC : Rival School 2
- Atomiswave : Hokuto No Ken, The Rumble Fish 1 & 2
- Naomi : Melty Blood Actress Again
Might also be worth upgrading your versus fighting cabinet into a versus cabinet by adding some classical non-fighting versus games like Windjammers or Super Puzzle Fighters 2, except if you intend to make another dedicated cabinet for them.

@VictimRLSH It's only a three button game as opposed to the more complicated games so it's a simpler control scheme as far as inputs go. I think it's a much less intimidating fighting game. There is a "gem collecting" aspect. You hit your opponent and gems could fly out. You can power up moves based on collecting gems. Some of the move animations are really fun.
