Pretty much as per title, I’m loving the performance of the Pi4, and rather than having it sitting around doing nothing, may well install the weekly dev build. If I do that, will it eventually upgrade to the official build, or would I need to re-image when that becomes available?

As an aside, I follow the GitHubs, and can see just how much hard work you’re all putting into the new build. Just wanted to say well done:)

The Pi4 bits are already in the main branch (master) of RetroPie, I don't think you'll need to re-image when an official release - supporting the PI4 - will be done.
