So I was able to install lr-daphne from the source. No issues there. I did a reboot. It does not show up as an option in "select default emulator". Any ideas? And thank you.

lr-daphne is not part of the standard RetroPie installation. You need to manually add it to the emulators configuration file (emulators.cfg) for the Daphne system in order to be selectable.
However, as far as I know and based on the forum users' reports, it's still in an alpha stage and it's not working completely, so I wouldn't bother installing it.

I've just added the core to my repository in the hopes that we can figure out the directory structure that works as what works for standalone does not appear to work for the libretro core. You can find it in my RetroPie-Extra repo: https://github.com/zerojay/RetroPie-Extra

@zerojay There's also daphne singe if you're interested. I got it working from the terminal. https://github.com/DirtBagXon/singe

I don't suppose Mach 3 works properly? I know there are audio problems on lr-daphne. There certainly are on my install, and this compatibility list reports it also: https://docs.google.com/spreadsheets/d/1Hy2VpPXgs4a9imeu0_w3SpehKEkhUNOLzD1jhcgwS3o/edit#gid=0

@shavecat Nope. Read what I said.

Lr- Daphne sucked the last time I tried it on my pc. No audio, compatibility was bad, weird folder structure, and crashes a lot.

@AdamBeGood Daphne Singe only plays certain games. My post that I linked to has the list. The dev also has his own Daphne port but I'm not sure that it's arm compatible.

@Darksavior Cool, I thought that was the case but thought I'd double check. I'd like to play Mach 3 properly, it is the only game I have that isn't working well (apart from GP World where I couldn't work out how to accelerate).

Sure, I can take a swing at it if it makes sense (works well enough, etc...)

It's arm compatible, and has singe support built in, but doesn't run roadblaster on retropie...
