How to migrate games to different partition on Ubuntu?

I have a fresh install of Ubuntu 20.10 and a fresh Retropie install. I have placed my games in the usual folder in my home directory: .../RetroPie.
However, I dont have that much space on my disk, so I would like to put my games on another NTFS partition which is much bigger. How can I do that?
Is this correct? I just "mv" the entire folder RetroPie to the NTFS partition, and create a symlink to that partition with "ln -s ...."? Is this correct? I do not need to move the "RetroPie-Setup" directory?
And if I scrape my games, the scraping will end up on in my "RetroPie" directory on the NTFS partition, and not in my home folder?

@brutalizer Slightly off topic, but do you mind if I ask what instructions you used to get Retropie on Ubuntu 20.10? I'm wanting to do this myself.

codo[final edit:] to build some additional (optional/experimental (can't remember which one, could have been lr-mame 2016)) packages, it was neccessary to install python 2 (which is EOL, and therefore not included with UBU20).
