Can't get older ROM's to appear in the GUI.

I setup a new RetroPie via the latest v4.7.1 on a nice shiny new Pi4. Everything works great and newer roms dropped into the /arcade directory work fine. So I know that at least my foundations are set.
But I have a big collection of roms that are older. And I'm trying to figure out what version of Mame works for them and where to put them. The few "newer" roms that I have appear to all be compressed. When I drop them into the arcades directory RetroPie picks them up without issue.
The contents of most of the directories of roms are full of .bin files. Trying to run the latest version of Mame on my laptop (Arch Linux) with a few test roms seems to be... uh, odd. It gives me a huge list of games that I don't have. And doesn't seem to see the test roms I setup.
I've seen several people mention on this forum older versions of Mame. But the main Mame site has a LOT of older releases. I'm not sure I understand which versions I should try against. All of them? Yikes!

You need to filter the list by the 'available' games, I think by default MAME will list all the games it knows about.

Matching random ROMs to a MAME release is pointless, since the ROMs don't have a version attached. The recommended method is to get the ROMs for the version supported by the MAME version you have/intend to use - see https://retropie.org.uk/docs/Arcade/ and the links from that page.
