@TalesOfCreation ...you are leaving out alot of information in your question of trying to figure out what hardware version of a Raspberry Pi to use.
There's no right or wrong answer really. Sure, newer versions of Raspberry Pi boards are quicker and more powerful than the older boards, but without knowing what you are wanting to do with it, there's no answer other than "yes, they all work".
For example, do you want to emulate 2nd gen consoles (Atari 2600, Colecovision, etc.)? Then any of the Raspberry Pi boards work great and pretty much operate the same. Want to try 4th or 5th gen consoles? Depending upon the system, the newer boards probably run them better.
What front end and theme style do you want to use? Default EmulationStation? Or do you want to try alternatives like Attract Mode? For instance, Attract Mode allows far more GUI customizations than EmulationStation does (if you use a theme with lots of movement, videos, etc.), but that additional "eye candy" comes with a performance demand increase that the newer boards will work better for.
Are you wanting to put the Raspberry Pi into a handheld device the size of a Game Boy? Then the Pi Zero is probably the better choice.
So yea, there's lots of design decisions that will go towards figuring out which Raspberry Pi to use for your particular use case. Once you know what you'll be doing with it and what systems you'd like to emulate, that will help in figuring out which one to buy. Newer boards have newer technologies and are always more powerful, but that might not matter for what you're trying to play.

2Gb is enough for RAM, for storage - probably 64Gb should be more than enough for earlier non-disk based systems. If you want to add many PS1/Dreamcast/DOS Games, you may need more.
