Additional ROMs won't appear/ Emulator list will not update

Hi all,
I've set up my raspberry pi emulator in an arcade cabinet. Everything has gone relatively smoothly so far, but I've hit a wall that I can't seem to get past, and most of the solutions that I read seem to be not quite what I'm looking for. Here's the problem:
I want to add new roms to the retropie. I'm using a thumbdrive to shuttle them back and forth to the computer, which worked great the first time, but now the pi seems to want to ignore it. I'll try to add new ROMs to the MAME emulator, and it will not recognise that I did so, even after resetting. (Both through the software and just turning it off and on again) The same thing happens when I try to add ROMs for other emulators. The folders are all there, but whenever I put anything in the ROM folder it's ignored.
I can actually pull the thumbdrive out entirely and it doesn't effect anything. Everything still plays fine as if it was there. Hoping someone here has some insight that I'm missing.
I did my best to gather the information you need, but there were one or two things that I didn't know as I didn't set it up entirely by myself.

Controller: Arcade. (They came with the cabinet)

We followed that pretty closely. I made sure to buy the exact parts that were called for.Hopefully someone here knows the step I'm missing here. Thanks in advance!
