Troubles mapping controller

Hey everyone. Just built a retro pie and am a noob at all of the setup and config.
I'm trying to play Mario kart 64, but I hate how the buttons are mapped and would like to map them to my own specifications. I can't find any helpful videos that relate to 4.1 so I'm having major issues and am driving myself crazy.
I guess I can suck it up, but I want to make the controls easier for myself and friends to play. They just seem out of place and inconvenient.
My majors issues are that my a and b buttons are switched (I understand this is natural) and I would like my Z button (fire items) to be my left trigger. The rest of the buttons I could care less about, but I also want to be able to use the A and b buttons as they are intended while in the emulation station. I didn't think it would be this hard to setup custom controls on the retro pie. I've been playing roms on emulators on my computer and they make it so easy to map to personal preferences.
Any suggestions guys?

@jmdub It's all in the Wiki mate. Almost every question you've got that isn't about advanced config or scripting is already documented. I've just gone to the N64 section of the wiki and scrolled down to the controls section where it tells you where to find the config files to amend. Okay, so I just spent another 7+ hours watching videos, reading the Wiki, and trying to figure this out and I am still having no luck. Please keep in mind, I am a noob at this so I do apologize in advance if this is something so simple that a monkey can accomplish. I have no background in setting up this kind of device and I thought this would all be a lot simpler than it is.
I tried following with the Floob guide posted on the Wiki, but when he gets to the hotkey.sh part (10.45), I am lost as that file does not exist. Should I create that file or am I missing something and it can be located elsewhere. Is this effecting what I want to accomplish? The hotkeys for bringing up the RGUI menu (Select+X) work on NES, SNES, but I cannot figure it out on N64 whenever I start up a game.
Once again, I apologize for being a major noob. I just want to get this thing working. PLEASE HELP

@jmdub Retroarch only applies to Libretro based emulators (the ones prefixed with lr) and the others have their own config files. By default the N64 emulator in RetroPie is a non-libretro one, so you'll have to check and amend the config files manually or read the setup information on the official site here http://www.mupen64plus.org/wiki/index.php?title=ControllerSetup

@markyh444 again, I appreciate the response. Let me also reiterate again that I don't know how to do this. Sure, this may be a simple thing for you to understand and do. I get that. If you or anyone could EXPLAIN how to do this on the retropie, I will never post again.

@jmdub Whilst I really don't mind helping and pointing you in the right direction with regards to where to find the info you're after, I'm not in a position to hand-hold you through it. You'll need to determine what buttons are what as far as the Pi sees them by using jstest (plenty of guides on this, use Google) then edit the config files I've directed you towards earlier. You can edit the files directly from the command line, or browse to them over your local network from a Linux or Windows machine then edit using something like nano or gvim. I managed to figure my way through this myself via reading the wiki, searching google and reading the Glupen64plus official wiki as well. My knowledge of Linux and how the emulators pull the config information was rudimentary, but by searching and reading and giving it a go, I got there eventually. If you take a copy of the config files, you can always roll things back if you mess it up, and the Pi was designed as a learning tool so just have a go! I don't want to discourage you from asking for help, but you've got to meet us some of the way. Just saying you know nothing and asking people to just tell you what to type won't be beneficial in the long run for anyone.

@markyh444 First, let me apologize if I came off as needy or rude. I was having trouble locating the information I wanted, or had trouble understanding it I guess would be a better way of putting it.
Secondly, I would like to thank you for all of your advice and assistance. I think I finally figured out what I am doing. Turns out I understand things when I see it on my Windows desktop and just needed to edit information there instead of trying to do it on the Retropie (not sure if that makes sense).
Lastly, I want to say that I FINALLY got the buttons mapped how I wanted them in N64 and this also gives me information on how to do it in other emulators should I choose to do so.
