Controller won't map properly for NES

Hello all, newb here to the pi and this kind of stuff in general so please bear with me... I have a new Pi3 Model B and 8BitDo SNES controller. Using instructions from GitHub and I assume the latest software versions, I have installed RetroPie / emulation station and loaded a few NES, and n64 roms. I have mapped a keyboard and the controller. The n64 tests fine (as good as it can with a d-pad); start-select exits the rom, all the buttons work as expected. For NES (only have Mario and Castlevania loaded right now), nothing works right. Only the dpad and start work, and start is making the character jump. I can't even exit the rom with the keyboard or controller - have to kill the power which is bad right?
Other problem: no audio. I have a pair of bluetooth headbphones that show up in the registered list but play no audio. The 3.5 works but is noisy and very poor quality.
Input appreciated! Have looked around the emulation station menus and haven't able to figure it out. Not very experienced digging around this stuff.
