Bartop Arcade Project - Confused

Hey guys! I want to start a bartop arcade project with my son but I am confused on where to start. I have been looking at a few bartop arcade kits on Ebay and have used retropie in the past with my Pi2. Planning on getting a Pi3 for the project.

Using the above DIY cabinet, what joystick and buttons should I get? My son and I are more of Street Fighter and Killer Instict type games.

From reading previous posts here there are a few people that like the above Zero Delay USB Encoder. Would this work with retropie?
Any help would be greatly appreciated. Thanks!

- joysticks and buttons are up to you, just make sure they fit in the hole, 28mm or 30mm. etc.
- I use zero delay usb encoders and it works great with RPI.
I sell a kit you guys could build together... Its not your typical wood w/ vinyl kit you see everywhere.. Its clear laser cut acrylic designed for trackball + good happ buttons, and a 10.1" display.
Here is the one i just finished. let me know if you are interested, I can sell you JUST the laser cut parts if you want.
