      I'd like to disable to feature where you can press a button to bring up extra options that let you select which emulator to run amongst other things. I've got my machine configured and I don't want anyone to screw it up.

          Go to retropie setup in retropie menu.
          select the one that says something like (To be used post install)
          Scroll down to I think its called Edit runncommnad....it will say something about runcommand.
          You can disable it there.
