I am used to running Kodi on a windows machine. On those machines I can have an external HDD with my media and stuff on it attached to the pc. I can set up a path that is D:Movies\movie. With this set up windows very rarely changes the drive letter, but when it does there is a very easy fix. 1 time I set up an Android machine. On this machine I had to set the external drive as internal storage otherwise the Android os would change the name of the drive on every boot and my paths would be all messed up.
I have never done anything like this on Linux or a raspberry Pi. I plan on attaching my external hdd formatted in NTFS to the Pi4 I have and create paths for the media to load from. Do I have to be worried about these paths changing on every boot? If so, is there a solution?
Right now I have separate, smaller HDD set up for my ROMS and somehow (can't remember exact terminology) I have that set as storage for all the ROMS and if it is not there I have issues.

You can set up your HDD to be mounted under the same 'mount point' every time - something similar to https://retropie.org.uk/docs/Running-ROMs-from-a-USB-drive/#manual-mount.

Finally getting around to working on this. Question. If I mount the USB for movies and the like, not ROMS, using the above guide and end up removing the USB drive will this affect the overall program or just when trying to read media in Kodi? Basically I want to test stuff and not have to start from scratch if it doesn't work like I want.

You can remove the USB drive as long as you don't need to read stuff from it.
