Is it possible to simply ghost/mirror/duplicate my mini-SD card, stick that copy into another pi of same model, and have that up and running instantly?

Yes. Win32 Disk Imager can both read and write SD card images.

You can stick the SD card in your PC, read the image to a file named whatever you like, then stick in a different SD card and write the image back out to that.

I've not done it with different hardware, but I have done it to move my whole setup from a 32GB to a 64GB microSD card.
