Mayflash F300 switch settings

I'm running Retropie 4.7 on a 2GB RPI 4, and I can't get the F300 configured. The Mayflash documentation is a joke, and doesn't actually reference Retropie.
I've no idea what the F300 buttons affect, and after setting the F300 initial config, the setup for MAME acts really strange. Specifically, I've just defined the joystick and 4 main buttons, plus a select and play. When I start a MAME game, my keyboard TAB doesn't open the game config menu, but the joystick down does. I can't move the config menu selection using the joystick or keyboard.
I think that it's related to the switch settings on the F300, but I've tried all the combos (I think) with no effect. The F300 has a large Start Options Menu button that doesn't seem to do anything. Do I need to remove power (disconnect USB) from The F300 for any changes to take affect?
I'm really at a loss on how to proceed. Initially, all I want to run are MAME games and maybe Atari. BTW, I can play the games in MAME with the A/B/X/Y buttons, but not the stick.
