"Warning: Missing assets, use the Online Updater if available" - how to fix?

Raspberry Pi 400 Retropie Version: 4.7.15 Running on Raspbian GNU/Linux 10 (buster)
I'm trying to set up my own collection adding systems/roms/extras which makes my head glow most of the time :)
Most systems when launched show this error/Information AND actually seem to work, but I'm just worried I'm digging myself a hole now (if I don't fix it) which will cause me lots of problems later :|
I've tried to find this Online Updater within Retroarch but cannot find it? I'm assuming somehow the file structure is messed up and I've not got these 'assets'.

@nevsan please fill out ALL of https://retropie.org.uk/forum/topic/3/read-this-first including image file name and verbose log.
