Recommendations for Emulators on x86

I am using Retropie on an Intel NUC i5 with Lubuntu x64. I guess that the default emulators currently in Retropie were chosen primarly with the focus on optimization (and performance) for RPis.
But I learned that sometimes the emulator that is considered to be the best choice on x86 might be different from the one for RPi. So I want to ask if you guys could give me some hints which emulators would be the best choice for x86. Maybe lets assume that we are not limitd by CPU constraints on x86.I would like to fill a list here if someone give recommendations so maybe this can be useful for others also:
Commodore Amiga: fs-uae
Dreamcast: lr-reicast
Playstation One: lr-beetle-psx (?)
Commodore C64: VICE
Nintendo 64: Mupen64plus (?)
Super Nintendo: lr-bsnes
Sega Mega Drive: lr-genesis-plus-gx (?)
Playstation 2: PCSX2
Gamecube: dolphin
Sega Saturn: lr-yabause (really slow on i5)This is what I am currently using or planning to use. Do you guys see room for improvements (especially the entries marked with '?')? Are there systems missing from the list that could be improved by changing to another emulator?
Also if you know emulators that are better fitting but currently not available in Retropie then I would love to try to add it. -
On i5, i would go for bsnes-libretro for Super Nintendo. Also, i would definitely run a saturn emulator (yabause or beetle-saturn, they should be pretty close in performance/compatibility) on i5, mainly because of bomberman saturn (i love party games and this one is the best ever).

I have added bsnes module to optional section. There are probably other libretro cores which would be useful for x86 that are not yet included (as my main priority has been the rpi)

If you have any specific emus in mind you think I chould give a try in adding them to Retropie, feel free to write them up. -
Perhaps supermodel3 would run decently on i5 above 2.5Ghz.
