Questions regarding additional emulators and EmulationStation controls

Hey guys, I'm new to RetroPie and emulation. Got two questions I haven't been able to answer by googling/searching the wiki so I figured I'd try asking here.
How do I add more emulators? I'm primarily interested in installing the two extra listed on the PS1 wiki:
pcsx-rearmed
lr-beetle-psxThe reason I want to install these is that I'm having a few issues with some of my PS1 ROMs on lr-pcsx-rearmed.
Another, unrelated question. Is it possible to set the EmulationStation controls without messing up RetroArch? By simply setting the controls in EmulationStation I've gotten the in-game controls right for all the emulators I want to use, but my B & A buttons are "reversed" in the sense that I use B to confirm and A to back-out if that makes sense. I'm using Xbox 360 controllers and set it in EmulationStation according to this scheme from the wiki:

i think your rom issues will definitely be solvable if you give us some details? lr-pcsx-rearmed is only slightly different to the standalone version, and does not have any compatibility advantages. lr-beetle-psx will be unplayable.
that said, if you still want to try them, run retropie-setup > experimental packages > etc.

The main issue I'm having is with the game "Crash Bash" where the pause menu is not displaying any text, however you can still move around and select the menu items. This makes it near impossible to for example change game modes so I'd really like to solve it.
I've tried both the EU and US version ROMs. Googling revealed a few (very old) forum threads for another emulator where changing the graphics module seems to have fixed it.

@noobia have you solved the problem with "Crash Bash"? How?
