RetroArch controls get messed up

Greetings. New to RetroPie (and Pi for that matter) scene. Heard alot about these and this package and picked up a kit on eBay the other week. Got it setup and loaded with ROMs, and experimented with SNES and N64 games for the most part. I'm not sure what happened, but at some point my controls within the emulators got ALL messed up. Everything is fine and predictable within EmulationStation, but as soon as I launch into a ROM, it turns into RT is "Start", Left D-Pad is "Up", Right D-Pad is "Down", and that's about all that was memorable.
Couldn't figure out what Select was to do Select + Start to exit, can't get the RetroArch menu to come up. Hell even my keyboard doesn't work properly. This was originally using a Xbox 360 Wireless Controller btw. I recently picked up an 8Bitdo NES30 Pro bluetooth controller as I never really heard much of any recommendation of the Xbox controller for these. Same shenanigans...
I really wanted to get this figured out on my own, as the learning experience has been fun, but I've become exhausted and frustrated beyond belief and just want to enjoy some old gems. I have SSH enabled and can access the Pi's files from my Win10 desktop. Can someone give me some insight please??
