Retroarch Quick Menu Inconsistency Between Emulators

Hi there!
New here, and new to retropie.
I've just finally started to get everything set up on my new system, but encountering a strange issue/inconsistency.
I'm using a rPi 4b with retropie version 4.6.7 on an old CRT TV. Because certain menus can be challenging/impossible to read in Retroarch with the default theme (XMB I think?), I've changed the theme style to RGUI, as it's large, clear, and legible with my limited resolution.
All of this is good and well, except when it comes to the Quick Menu in game. I've noticed that the Quick Menu matches my selection of RGUI when in the following emulators:
-N64 (lr-mupen64plus-next)
-PSX (lr-pcsx-rearmed)but then in the following emulators it appears as the default that I can't read (XMB I think?):
-SNES (lr-snes9x)
-NES (lr-fceumm)Anybody have any tips or solves? Because I set up RGUI for Retroarch as a whole, I'm a little baffled as to how these two emulators are still referencing the old theme.

RetroPie configures RGUI as the default RetroArch menu driver,
xmb
can be used but must be explicitly enabled via the Configuration Editor. Which image did you use to install your RetroPie ? -

RGUI is the default in retropie. did you delete any .cfg files? please fill out https://retropie.org.uk/forum/topic/3/read-this-first?

-NES (lr-fceumm)again, suspect you've deleted or messed with .cfg files. please provide a verbose log for these, as per my above link.
