Hello RetroPie World!

Hello Everyone,
I am new to RetroPie and using a Raspberry Pi in general. This is my first Project I have ever worked on so please be patient as I ask questions.
Specs -
Raspberry Pie 3 Model B w/black Raspberry Pi 3 case
Wireless Xbox 360 controller and wireless controller dongle
32GB Sandisk class 4 MicroSDHC card
8gb USB disk for ROM Transfer
HDMI Cable for HDMI outQuestion 1: Is the plug outlet next to the HDMI port on the right a 3.5mm Headphone jack?
Question 2: I first started with an Nintendo 64 ROM and I noticed that when the Raspberry Pi was saving or loading the sounds and video would lag really bad and screen tear a bit. Is the RPi capable of playing N64 ROMS or is there some settings I need to tweak? -
- It's a composite output. (Red, White, Yellow) It's not designed for headphones, but you could try it.
- N64 is going to struggle on even the most overclocked Pi 3. Some games are almost passable, but none run well on a Pi 3. Your Class 4 SD card is a bit of a performance bottleneck (Class 10 is recommended) but even with that, N64 isn't going to be smooth.

- I found the Retro Pie wiki page and I saw that Nintendo 64 and PS1 Gen games might have difficulty playing the games. Also, I wasn't sure what the class 4 controlled but now I realize it's possibly part of the processor speed. At some point I plan on getting a Class 10 MicroSDHC card. I just was using what I had off hand to check it out.
When I noticed the screen tearing and sound delay/lag I was wondering if some of that was from having to tweak the available clock speed between CPU and GPU performance. I don't think I have the right stuff to overclock my RPi 3 just yet so I'm going to hold off on that for now.
New question, How do you change which emulator is the default emulator for each system? I saw on the N64 page that sometimes changing the emulator to a different one for different games can help with some problems. Also, that sounds like something that knowing would be useful for other game systems as well.
Also, I'm reading the Wiki page but I may have not found this step yet. If it's in the Wiki please link it and I'll read the instructions on the page.
