Help with button layout 2 player cocktail cabinet

Hi I'm constructing a 2 player cocktail cabinet, I have 2 sets of 4 generic buttons, 8 Japanese buttons, Japanese joystick.
I plan to use the generic buttons for start select etc, I was wondering which of these I should include?
Also any reccomends for a 8 button layout primary games will be old arcade games such as 1942 etc.
Finally any recommendations for how to setup 2 players on a vertical screen. Should I mirror the screen or flip the game each turn and could anyone point me in the right direction to do this?
