Controller button mapping?

Hi, my question is two fold, I think... :)
I have a iBuffalo BSGP1601, think a a cross between a playstation controller, but with a six button layout. The controller "works" as is with Retropie, but somehow, I have managed to get unintended OTHER buttons mapped to my controllers. One of my trigger buttons executes the TAB key from my keyboard, and pressing in on one of the analog sticks equates to pressing the F2 for the dipswitch.

How can I un-associate my controller buttons from being associated with anything else, such as the TAB, F2, and anything else that might be linked?

I would like to use buttons on this controller that are not called for when setting my controller up in emulationstation. It calls for A, B, X, Y, then the shoulder buttons, triggers, etc. I have noticed, like when setting up MAME controls, only the buttons entered when setting my controller up in Emulationstation are recognized. Is there a way to get all buttons recognized by my games?

@I_Died_Once I am not fully fim9iliar with MAME, but there is additional control options in the retroarch controller configuration. though you would need to know the button number (http://html5gamepad.com/ is a okay site that seems to work for me)

My iBuffalo also mapped like this. In the Mame emulator use tab to get to the general control configurations and use a combination of a keyboard and your controller to properly map the inputs.
