Will any Wiimote work with the dolphin bar or do I need a specific model? Also does it still only work on MAME’s? Thanks.

Chances are, there's going to be some 3rd party knockoff Wiimotes that it won't support.

The Wiimote/DolphinBar is seen as a standard mouse, so any of the emulators that allow a mouse to be used as a light gun will also work to some degree. I assume these questions are in response to the ETAPrime video released the other day. Something else to keep in mind that he was incorrect about is that the DolphinBar will only simulate one mouse, making two player gun games impossible without a second mouse or DolphinBar.

but yes most emulators that use mice work. Dosbox works too for lightgun games
