Dos/old PC build

Hi I've recently broken my leg and im after a new 3B DOS/old PC games only build (doom, tie fighter, Prince of Persia etc) Just running solely old pc stuff...nothing else that will take away from the build.
I'm a noob with retropie but I'm on the capable side of building- I built a dream arcade machine 3 years ago and it's going great still.
I was just wondering if anyone has any advice and image set up and what way to go. I'd like to test run on HDMI then maybe pay someone to Taylor the image when I've decided on my build set up (mono, sound etc)... I'm not really wizard enough to do it myself.

@mattyl42 I'd suggest trying Dosbian if you're going to attempt a DOS build with the Raspberry Pi and the website should have all the information you'd need on it.
I'm not sure if I can recommend a CRT monitor anymore, they're hard to find nowadays and plus modern IPS LCD displays have gotten very good with response times and input lag, if you buy the gaming esports ones or ones rated for under 5-10ms.
but if you're going to be playing DOS games then you're going to be stuck with 4:3 aspect ratio most likely. A cheap 1280 x 1024 Viewsonic display is close enough, you can get mini HDMI to DVI adapters for the Pi, any model, not just the Pi 3B.
I've got some ideas what I want to do with my Pi 4 after new year. I could turn it into a DOS gaming rig or arcade machine, with a bit of creativity we can do pretty much anything with these machines, maybe even use it to monitor room temperature if that's what's needed for someone's use case.

I'm no good with Linux script. On my acrade build I tried 3 different screens all wider x 16:9 and they all looked awful. I went with a 2000's style 4:3 flat 20inch monitor but I had to get someone to set the PI up for VGA output and resolution and sound output on the headphone jack for the amp. I also used a VGA signal booster. The screen filters on retro arch are amazing for getting the CRT scan lines and barrel shape...I'm still in awe of the display after 3 years!
The guy also took all the things off that take away from a stand alone arcade machine... I found people go for a look in Amiga or PlayStation(keyboard+analogue inputs) and that makes it poor because it doesn't work with pure arcade inputs. I'd much rather get an expert to help with the script though. 😎
