Steering wheel left/right axes behave digitally and no auto-center in games

Hi. I have two steering wheels connected to my Pi400. The wheels I have are a Logitech Driving Force (older) and a SuperForce (brand new). All controls register in the games and the two wheels behave the same way. What I'm finding is that when turn left and right, the game registers this "digitally", meaning I turn the wheel to the left, and the wheels on the race car don't turn until. I keep turning the wheel to the left farther and all of a sudden the wheels on the race car turn left ALL THE WAY. Same behavior when I turn right. Same behavior on both steering wheels. Both steering wheels also return to center, but the wheels on the race car do not center. I've played around in RetroArch quite a bit, but I can't figure out how to get the wheels on the race car to be have in a more "analog" way, where they turn proportionally with the steering wheel. How do I fix this?

Power Supply used: OEM power supply that came with the Pi400
RetroPie Version Used: 4.8 w/EmulationStation version 2.10.3
Built From: Pre made SD Image on RetroPie website
USB Devices connected: Mouse
Controller used: Logitech Driving Force steering wheel and SuperForce steering wheel.

@nylinmatt is this for all games or a specific one? One setting comes to mind though. Go into core options->input-> center joystick for digital controls -> disabled.
