Some emulators not getting ROM maps on USB, PSX no single file ROM

Hi all,
Installed RetroPie today on my new (and first) Raspberry Pi, and it works like a charm!
It even manages to run Super Mario 64 for me, almost flawless - just a bit of slowdown in the first few seconds of opening a level, and very occasionally when a lot gets into view at once.
Two things that I can't get right though:
- I add ROMs through the USB method, but some emulators don't get maps added on the USB. Specifically, Dreamcast and ScummVM. I thought these emulators should already be installed under RetroPie, the docs on these two don't say that I should install stuff... Can I just add these maps manually? Or is something else going on?
1b) Side question: can ScummVM even be played with just a controller, and no mouse/keyboard?
- For PSX, only one ROM which I downloaded has only a bin and cue file. The other games have a bunch of files. Can I just dump everything together? Should I do submaps? Should I look for different ROMs?
2b) Side question: the one game I have installed now for PSX, Dark Forces, pushes me out of the emulator the moment it finishes loading the first level. Am I doing something wrong?
P.S. I used the RetroPie 4.3 image on an untouched Raspberry Pi 3 Model B.

- Dreamcast and ScummVM are not installed by default, they're optional. You can install them from the RetroPie setup menu, from the Optional packages section - just install from binary and the emulators and folders will be added to your installation.
1b - I'm not sure, I don't use ScummVM.
- PS1 games are CD rom images, so they have a different format than regular ROMs (.zip), .cue and .bin files are ok, so you don't have to worry. Just make sure the .cue and .bin filenames are correct, Linux is case sensitive.

2b. Seems like a missing BIOS file or incorrect .cue/.bin file. Have you added the PS1 bios file to the BIOS folder ? (see the link above).

thanks, I'll look for that option after the scraper has finished (found that while looking for the install options and once I realised what it does I just had to do it).

not all have the same files it seems... Driver has a .bin.ecm file, GTA2 and Dark Forces have a .bin and .cue file, Rayman has a .bin.ecm file and dozens of .ape files, Spider-Man has a .ccd, .sub and .img file... Those are the only ROMs I downloaded because they're the only games which I actually bought (for my brother's PS1) but I don't see a real overarching approach here. I don't have a bios file... I saw the Dreamcast page saying something about that but I didn't even have its map so I didn't think anything of it. I see both the Dreamcast doc and the PS1 doc talking of a BIOS file but I didn't get that the emulators are actually missing files; I don't know ehat BIOS files are and do, or where I should get them (probably worth a Google, I'll do that today).
