anything is possible, but tbh it looks like more truble than it will be worth.
obviusly you will need to remove some of the board and you will most likely also need a new control board for the screen and will therefore most likely not fit inside the old case either.
cosiddering all this and the fact that you had to ask if it was possible, i would say this is likely a job way above your skillset and not worth the efford, for you.
personally i would just get one of the many kits available.
RetroPie includes several arcade emulators, including older versions of Mame, FBAlpha and even the current Libretro Mame branch (lr-mame). Take a look at the Arcade section of the docs to see what is available. I think cocktail mode works with at least lr-mame2003 (see Tate mode).

@benjaminjay I agree that most game cafe's and such don't do their full due diligence in terms of having full legal right to do everything they do.
I can tell, as my return to the emulation scene after many years of hibernation was triggerd by an obviously custom made MAME cocktail table in a German craft beer bar in Winter 2016. Now, I have a self-made upright cabinet in my living room. Damn those bar operators! ;) (and the "good friend" who led us there)
@vof Nintendo DS, possibly, but definetly not Gamecube or PS2. The latter two are fairly intensive systems to emulate, especially the PS2, and you'll almost certainly be getting very low frames per second. (very possibly <1 FPS)
Those two are really only suited for relatively beefy machines and high-end netbooks.
