Got it all sorted out.
Fruitbox running smoothly on a Jessie-based RetroPie image, straight from the EmulationStation main menu.

Ok, it was my fault:

It was having something to do with my overclocking settings!
I believe maybe something with my voltage, ill use now the default settings.

Since then, no more freezes!

Since this is the first Google result for the question, and it didn't fully answer it:

Press and hold any button to skip a button configuration. This is in the instructions and (sometimes) in the GUI.

When you get to 'OK', you must press the button you've configured as the 'A' button in order to continue. This is also in the instructions but not in the GUI. Most of the interface assumes you are using a controller and controller-like inputs.

RetroPie doesn't have any music in EmulationStation - are you using a 3rd party image ?

@UberLumby Yeah, I just stumbled upon subfolder scraping by accident myself. Also didn't expect the scrapers to do that.

(Like I noticed the "hide preview" button in the forum editor right now by clicking on it accidentally on my way to the "submit" button. 😆 )

@mitu Nope, did nothing, just reverted to 100% when I quit reloaded. And wouldn't be much use anyway, as I want to play it specifically in lr-fuse.

@shift I don't have dedicated threads for each individual lr-mess system I run, but the short answer is "more-or-less all of them".

Just to rattle off some of the ones I've tried on my Pi, with decent-to-perfect performance:

Phillips CD-i Epoch Super Cassette Vision V.tech V.Smile Various plug-and-play systems (both "official" and bootlegs) Tiger Game.com Fujitsu FM Towns

Once you get down how the core works (which admittedly is a bit of a nightmare), it's insanely versatile since it runs all the same systems as modern standalone MAME (according to the current docs, that's roughly 32,000; that link at the top is a good few years out of date). Arguably the most powerful core in all of RetroPie.

@zerojay The extensions were missing from es_systems.cfg in the openbor section; I just had to add them😊. It's launching now!!! Thank you so much for all your help guys. Really appreciate it.

@jgeibel still does not work. log file says that there is no emulator attached to the folder. With that language is still makes me think that it it looking for a single emulator binary to pay attention to for each folder

Well i can F4 out of it, and outside of RetroPie it works fine, same with the controller, but if i try to configure any kind of device as a controller in RetroPie it has that problem.

I got a USB Hat on the pi and thats how i connect USB and ethernet to it. it got power LEDs for each of the inputs and nothing seems out of the ordinary with it when entering into EmulationStation, so i doubt that the Hat is the cause of the issue.

Try searching the web for "wall mounted arcade cabinet schematics". There seem to be some to find, although alas, some inside walled gardens like Pinterest.
